There are times when all I ever want is a cookie but going through all that pain and baking a batch of 20 just so I can eat 1 doesn’t sound like the best idea. But abandoning the idea of dessert is not my thing, so if I want it, I get creative and I did, with this Deep Dish Chocolate Chip Cookie For One.

A little while back I saw a deep dish cookie on Pinterest somewhere, I didn’t pin the recipe so I could never find it but I decided to give it a shot anyway. What I baked was probably the worst cookie I’ve ever made, I mean it looked good but was the bitter -est (is that a word?) cookie ever. I figured I added excess baking powder so  I decided to give it another shot with reduced baking powder. And guess what? In the second attempt I FORGOT to put the baking powder. I mean why is the baking powder playing games? I only want a decent cookies. Give it to me already! The third attempt didn’t happen for days, but when it did I got it right and made this beauty! Only 25 minutes and I had my dessert ready! Finally!

This warm cookie with a crispy top and melted chocolate bits all over is just what you need on lazy day and is PERFECT with a scoop of vanilla ice cream! Try this simple recipe and bake this eggless dessert for one.

Makes: 1 Deep Dish Cookie
Ingredients
  • • Softened Butter, 1 tablespoon
  • • Sugar, 1 ½ tablespoons (I used 1 tbsp caster + ½ tbsp dark brown sugar)
  • • Vanilla Essence, ½ teaspoon
  • • All Purpose Flour (maida), 3 ½ tablespoons
  • • Baking Powder, ¼ teaspoon
  • • Milk, 1 tablespoon
  • • Chocolate Chips, a handful
Method
  1. Preheat your oven at 180 degrees Celsius for 10 minutes.
  2. In a bowl whisk butter and sugar until properly combined. This should take about a minute or two. The mixture will become a little fluffy and lighter in colour. Add in the vanilla essence and mixed.
  3. Finally add in the flour, baking powder and milk to form a soft dough. Remember, the dough shouldn't be sticky or too wet. It should form a nice ball and come off the edges of your bowl completely. If it's sticky add a couple teaspoons of flour. Don;t add too much because too much could dry out your final cookie.
  4. Add in the chocolate chips and mix them well.
  5. Transfer this cookie dough to a ramekin and spread it evenly. Sprinkle some chocolate chips on the top and bake for 15 minutes at 180 degrees Celsius.
  6. Let the cookie cool slightly for about 10 minutes. Top it with some vanilla ice cream once cool and ENJOY!

    Hi Radhika ! This one is lovely just like the others ! Can we use the dough to bake individual cookies? If yes, how many cookies will the dough make and we can use the same baking instructions, right ?

      Hi Purvi! Yes you can use it to make individual cookies but it won’t make more than 2-3. I’ve got lots of cookie recipes on the blog why don’t you try one of them? 🙂

      And no the same instructions won’t work for individual cookies. You will need to reduce the baking time to 9-10 minutes. Depending upon how thick you make your cookies.

    Just a small query- can I use the usual silicon /aluminium muffin moulds instead of ramekins?

      Hi Diksha! Yes ofcourse! Aluminum is perfectly fine but I’ve never used silicon so I cannot be sure.

    This is perfect! The only problem I have with home-made cookies is when I want just one or two cookies I end up with one or two dozen cookies that are so hard to resist. This fixes that problem. Plus it’s a cookie dessert! 😀

    Hi Radhika! This looks absolutely amazing. I really want to try it, but I got these ramekins from poundland in UK and I’m not sure if they are oven safe. What kind of ramekins did you use ? And where will they be available? Thanks a lot 🙂

      Hi Dhruvi! Thank you so much. I wouldn’t bet on the quality of Poundland but still give it shot. If they’re ceramic they should work. If it doesn’t try looking at Argos, ikea or even the home section of TK Maxx. If you don’t find them there then you’ll find them at amazon for sure. 🙂
