This soft baked Deep Dish Chocolate Chip Cookie is a perfect dessert for one. Try this quick and easy eggless recipe when you're feeling lazy, and make this gooey cookie from scratch in under 25 minutes.

Ingredients
  • • Softened Butter, 1 tablespoon
  • • Sugar, 1 ½ tablespoons (I used 1 tbsp caster + ½ tbsp dark brown sugar)
  • • Vanilla Essence, ½ teaspoon
  • • All Purpose Flour (maida), 3 ½ tablespoons
  • • Baking Powder, ¼ teaspoon
  • • Milk, 1 tablespoon
  • • Chocolate Chips, a handful
Method
  1. Preheat your oven at 180 degrees Celsius for 10 minutes.
  2. In a bowl whisk butter and sugar until properly combined. This should take about a minute or two. The mixture will become a little fluffy and lighter in colour. Add in the vanilla essence and mixed.
  3. Finally add in the flour, baking powder and milk to form a soft dough. Remember, the dough shouldn't be sticky or too wet. It should form a nice ball and come off the edges of your bowl completely. If it's sticky add a couple teaspoons of flour. Don;t add too much because too much could dry out your final cookie.
  4. Add in the chocolate chips and mix them well.
  5. Transfer this cookie dough to a ramekin and spread it evenly. Sprinkle some chocolate chips on the top and bake for 15 minutes at 180 degrees Celsius.
  6. Let the cookie cool slightly for about 10 minutes. Top it with some vanilla ice cream once cool and ENJOY!
