Marble Banana Cake (Eggless)

July 5, 2017 By Radhika Malhotra 6 Comments

Make super moist and eggless Chocolate Banana Cake with beautiful stripes using my simple recipe.

Marble Banana Cake

Hidden somewhere in some remote corner of my recipe folder was this treasure. I had completely forgotten amidst the madness of my wedding last year, that I made this beautiful marble cake! Last year went by fast, I got married in the beginning and honeymooned my way through 2016. Four holidays in one year, 2016 was something! But I didn’t blog as much as I wanted to. Between settling down, honeymooning, and just enjoying my first year as a Mrs, blogging took a backseat. I realised I had to figure out everything from the very beginning. From where I’ll shoot to when I’ll shoot and what and how I’ll shoot, everything was big question mark. Figuring your way out in a new house is tough. So I figured it was probably just easier for me go with the flow for a bit and see how things pan out. I knew I wanted to get back to blogging but “when” was the big question.

So now that everything’s settled, including me in new home, I’m back. And I hope you’ve noticed..with a bang! I started my YouTube channel which was something I had been meaning to do for so long. I’m learning how to make videos and I’ve realised that it’s so much fun but 10times tougher than just taking pictures. It’s time-consuming but when you see the end result it’s so satisfying!

Marble Banana Cake

Getting back to my cake of the hour! This gorgeous marble banana cake is moist like every good banana cake should be but those beautiful stripes are what makes it stand out. I Pinterest all the time for new recipe ideas, and when I saw this I knew this was something worth trying for sure. This cake is usually called a zebra cake because of the zebra-like stripes but I just like to call it a marble cake, simply because I didn’t think I did justice to the stripes, ha ha ha. If you end up making the stripes look prettier than mine, please feel free to change the name!

This cake is usually made with a simple vanilla and chocolate batter but I did mine with bananas. Bananas other than giving a great flavour, also give amazing moisture to cakes and I absolutely love how a banana cake tastes with tea. Which is my main motivation behind making them! This is one recipe that you should treasure and I’m so glad I found it in my recipe folder. I think I should revisit old recipes often, who knows what I’ll end up finding next time!

Make super moist and eggless chocolate banana cake with beautiful swirls, using my simple recipe.
Author: Radhika
Makes: One 6" Cake
Ingredients
  • All Purpose Flour (Maida), 150 grams
  • Baking Powder, 1 teaspoon
  • Baking Soda, ½ teaspoon
  • Salt, ½ teaspoon
  • Mashed Bananas, 1 cup
  • Butter, ¼ cup
  • Caster Sugar, ⅓ cup
  • Vanilla Essence, 1 teaspoon
  • Milk, 2-3 tablespoons
  • Cocoa Powder, 2 tablespoons
Method
  1. In a bowl, sieve flour, baking powder, baking soda and salt. Set aside.
  2. In another bowl, whisk butter until light and fluffy, about 3-4 minutes with an electric mixer. Add in the sugar and whisk for another 3-4 minutes. The mixture should turn fluffy and lighter in colour.
  3. Add in the mashed bananas and vanilla essence. Mix until properly combined.
  4. Mix dry ingredients from step 1 into this little by little, keep adding milk when you feel that the batter is turning dry.
  5. Divide the batter into two equal parts. Leave one part as it is, and mix in the cocoa powder to the other.
  6. Grease and flour a pan. To form the swirls, start by pouring 1-2 tablespoons of the plain banana batter in the centre of the cake tin.

  8. Next, pour 1-2 tablespoons of the chocolate batter right on it. Make sure you pour it in the centre.Marble Banana Cake

    Hi
I don’t own an oven. Is there an alternative to baking a cake?

Hi Kruti, most microwaves come with a convection oven option. See if yours has that. That’ll work just fine 🙂
