An all time favourite Italian recipe that makes soul-satisfying Pesto Pasta with Asparagus, Pinenuts and Cranberry.
After a whole week of no cooking and baking I’m back in the biz with this star of a recipe – Pesto Pasta! I’ve been extremely busy prepping for my first ever baking workshop (yayyyy :D) which is on the 2nd August (hope you’re coming!!) and with an out-of-town wedding! Ideally, when people come back from wedding weekends, they detox. They cut down on alcohol, fats, and carbs. I, on the other hand, have done the exact opposite. Why, you ask? Because I’m fearless. Carbs are my best friends, and unlike other people I’m not afraid to binge on them. So when I saw this Pesto Pasta recipe on Cook Gourmet I ordered it right away! I’ve never made anything remotely pesto-ey in my life so I was intrigued by one.

I’m a lover of Italian food and I personally love Cook Gourmet recipes so it wasn’t surprising that I ordered another Italian recipe from their menu (I’ve tried their Cheesy Pomodoro Gnocchi before, and it blew my mind away.) Like always all the ingredients came neatly packed and labelled which made the cooking process really breezy! All I had to do was follow their precise recipe and I had a plate full of soul food ready in 25 minutes!
- • Linguine Pasta, 350 grams
- • Potatoes (Cubed), 150 grams
- • Red Chili Flakes, ¾ teaspoon
- • Asparagus, 150 grams
- • Pesto, ½ cup
- • Parmesan Cheese (Grated), 2 tablespoon
- • Pine Nuts (roasted), 2 tablespoon
- • Cranberry Glaze, 1 tablespoon
- • Olive Oil for Pasta, 1 teaspoon
